Spicy Harvest Soup

Spicy Harvest Soup ~ falls' bounty of chunky vegetables simmered in a tomato based broth and just the right amount of heat from the jalapeno is the perfect comforting and hearty weeknight meal to feed your family.



Cook it once, eat it twice. That's the beauty of a pot of hearty, delicious homemade soup. You make it and there's always plenty left over for a second meal or for work or school lunches, making it one of the most economical meals. Also, soup, like stew or spaghetti sauce only gets better with age: as all of the flavors are released and allowed to settle and blend, the flavor from the soups ingredients intensify. Spicy Harvest Soup will become one of your favorite go to soups for the cold weather months.
As I was conceptualizing this recipe I began to think of vegetables from the fall harvest. Typically the first that comes to mind are the colder months harvest of carrots and potatoes, but there's so many more vegetables that are harvested this time of year. The list of fall harvested vegetables includes pumpkins, buttercup winter squash, acorn and butternut squash, radicchio, Swiss Chard, sweet potatoes, turnips, garlic, broccoli, cauliflower and jalapenos. I included some of my favorites in this Spicy Harvest Soup.


My best bet for finding everything I need for a soup like this is to head to my super Walmart store, where while there I can also pick up other household and personal needs along with some fall decorations. And the other great thing is that I always, always save money by shopping at Walmart. It's amazing what you can find for less!

While shopping at Walmart I noticed this new Prego Farmers' Market® sauce and was impressed that the ingredients are kin to what I would find at a good local farmers' market and picked at peak - a sauce with vine ripened tomatoes, garlic and my favorite Italian spices: basil and oregano! I knew that all the flavor in that sauce would be the thing that pulled Spicy Harvest Soup together. Just look down the sauce aisle at your Walmart store to find it! And while there, be sure to go over and check out the harvest vegetables in the produce department.



Here's what you'll need:
  • 1 -- jar Prego Farmers' Market® Classic Marinara
  • 2 - 32 oz. boxes vegetable or chicken broth
  • 5-6 cups harvest blend vegetables: carrot (3 large), butternut squash (1 small), rutabaga (1)
  • 1/2 bag frozen turnip
  • 1 large sweet onion - large dice
  • 1 bunch Swiss chard -pull leaves off with your hands and tear up
  • 2 cloves garlic - minced
  • 1 jalapeno - stem removed and diced small
  • 1 tbsp. olive oil
  • salt and black pepper to taste

1: Prep all your veggies ahead. The dish is rustic so large chunks are just fine with the exception of the garlic and jalapeno. I used my small chopper for the garlic and jalapeno and it was done in seconds!


2: In a large stock pot add the olive oil over medium high heat. Add the chunks of onion, the minced garlic and the jalapeno to the oil and sweat down for 2 minutes. Add salt to facilitate the release of the flavors and for overall taste.
3: Add in all of the chopped vegetable medley and the half bag of frozen turnip along with the Prego Farmers' Market® sauce and a pinch of black pepper.
4: Pour in some of the broth into the jar, lid it and shake it and pour into the pot. Then pour in the rest of the broth to the pot.
5: Add the Swiss Chard, cover and bring to a boil over high heat. Turn the heat down to medium and cook for about 45-55 minutes until the vegetables have softened.


6: Taste and adjust for additional seasoning of salt or perhaps black pepper.

Not only is this Spicy Harvest Soup really easy to make, I love all of the harvest vegetables in it and with the Prego Farmers' Market® sauce and it's fresh ingredients and spices, there was little other spices other than salt and pepper that needed to be added to make this simply scrumptious!
