Cranberry Granola Breakfast Cookies: the tasty way to the start of your day!


What is your typical morning like? Is it often hectic and chaotic? I remember those days of trying to get my kids to eat something before heading out to the bus for a long day at school. Some mornings there seemed to be ample time for them to eat and other times they were slow to get up and slow to get ready, so they skipped the most important meal of the day. I am offering a simple solution to breakfast that you or the kids will really enjoy and it's easy to eat on the go. We're taking the cereal out of the bowl and putting it in an energy boosting breakfast cookie.
These fun and delicious cookies are straightforward and so simple to make. It's a fun project to do with your kids too. Honestly, if you have any kids who don't like to eat breakfast - period, then this just might be your ticket. Sometimes it makes a difference with picky eaters if they have a hand in what's being made.

Sift together over a large bowl:
  • 3/4 cup all purpose flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
Melt:
  • 1 stick butter in a small sauce pan.
Add to the melted butter:
  • 1/2 cup dark brown sugar
  • 1/2 cup white sugar
  • 1 egg - beaten
  • 1 tsp. vanilla
  1. Mix until well incorporated and add the butter and sugar mixture to the dry ingredients.
  2. Stir the wet and dry ingredients together.

Add in:
  • 1 1/2 cups Cranberry Granola (I used a brand by Kellogg's®)
  • 1/3 cup raisins
  1. Mix well and refrigerate for one hour.
  2. Then drop one tablespoon of the cookie batter on a greased or parchment lined cookie sheet. I used my 1 1/2 inch scoop. Use a metal spatula to flatten the dough a bit.
  3. Bake in a preheated 350° oven for approximately 12 minutes.
  4. Allow to cool 5 minutes, then remove with a spatula onto a cooling rack.
  5. Place completely cooled cookies in your cookie jar or air tight container.
Prep time: 20 minutes
Cook time: 12 minutes
Yield: approximately 17 breakfast cookies
Cost: approximately $4.16, nets to 24¢ each.


I am thrilled with these thin, crispy, buttery breakfast cookies. Just sweet enough and there's also the great texture from the cranberry granola. My husband who now is of the age where he has to take certain medicines daily is glad to have these as the medication must be taken with food. He loves them and for me that's always a good sign!
