Cake Box Pumpkin Cookies

I am so glad I discovered some years back the secret to making quick and easy cookies using a cake mix. I've made quite a few here on Cooking On A Budget and they were all terrific. The best part about them aside from how easy and quick they are to make and bake - they are delicious and do not cost very much to make them.
For those of us on a tight grocery budget the inexpensive cake mix is a fabulous way to make cookies. Adding some key ingredients to change the profile and you have some tasty and very inexpensive cookies that you can pack in school lunches, have for dessert or an after school snack. And don't forget when you are asked to bake goodies for a bake sale for church or school ~ these are so quick and easy, and again, inexpensive.
  • 1 pkg. yellow cake mix
  • 1 cup pure pumpkin
  • 1/3 cup softened butter
  • 1/2 cup shortening
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  1. Place all of the ingredients in the bowl of your stand mixer, or use a hand-held mixer to combine all of the above ingredients.
  2. Use a 1 inch scoop drop the cookies on a parchment lined baking sheet about 1 inch apart.
  3. Bake in a preheated 350° oven for 15-17 minutes.
Prep time: 20
Cook time: 15-17 minutes
Yield: 32 cookies


 These cake box pumpkin cookies are indeed tasty with a very soft texture. I love how the vanilla and cinnamon work with the pumpkin puree. I hope you love them as well.
