Apple and Cider Donut Shortcakes

Sauteed spiced apples atop apple cider donuts with a nice dollop of whipped cream ~ fall is in the air.


My husband had a request for me to make apple pie or pumpkin pie this weekend, so I took out one of the Freezer Apple Pies I made a while back. What a life saver that was to have on hand. I took it out in the morning and by evening it was thawed and ready to be warmed up a bit in the oven. Just delicious! But for me I wanted something a little different ~ out of the everyday as I like to say. Spotting apple cider donuts on sale in our grocery store's flyer was the spark for this easy and simple dessert.
This dessert is one that speaks fall to me. Apples, although available year round are at their best here on the east coast in the fall. To me they not only invoke the feeling of fall, but best represent falls bounty. And what better to pair them than with a tasty fall baked good like apple cider donuts? Add some whipped cream on top and you summon up the feeling that you are eating a shortcake of sorts. Top with a few pecans or walnuts ~ it's a dessert you wouldn't mind serving guests.

  • 6 apple cider donuts
  • 1 pint whipping cream (or heavy cream) - or use something like Redi-Whip
  • 6-7 apples (any apple you like) - cored, peeled and sliced
  • 1 tbsp. butter
  • 3/4 tsp. cinnamon
  • nutmeg to taste
  • pinch salt
  • pinch all spice
  • pecans or walnuts (optional)
  1. Core, peel and then slice up your apples.
  2. To a skillet add in butter and melt over medium heat. Add in the slices of apple and give a stir.
  3. Turn heat to medium low and add in the spices. Stir well and cook on low heat for about 15-20 minutes covered, until the apples are tender.
  4. In a bowl make some homemade whip cream by combining the cream a touch of vanilla and a pinch of cinnamon. Use a mixer on high speed until the cream is whipped to your liking.
  5. Take the cider donuts and using a serrated knife split the donuts in half lengthwise.
  6. Place a donut on a plate and add a spoonful of the cooked apples.
  7. Top with some whipped cream. Nuts are optional to sprinkle on top.
You can choose to double-Decker the dessert or serve with one half of the donut.

If you own a drill you have to try this! It really works and it works well. Use a long bit in the drill and peeling apples is a cinch! It took my husband about 1 - 1 1/2 minutes to peel 6 apples.Just make sure you do it over your sink to help keep the peels from flying about.
